Josh Galliano

Adding some spice to the Monarch mixture is Executive Chef Josh Galliano. Josh finished his formal studies with a Grand Diploma from the prestigious Le Cordon Bleu in London. While pursuing his degree, he honed his culinary skills at Michelin starred restaurants Roussillon and The Connaught Hotel. Upon his return to the States, Josh found a home at Commander's Palace in New Orleans.

His next big enterprise was to cook under the direction of Daniel Boulud at his eponymous restaurant in Manhattan. There, Josh further refined his talents through Chef Daniel's modern interpretation of classical French cuisine.

Most recently, Josh has worked with Larry Forgione as Chef de Cuisine at An American Place. During his sojourn, he was invited to The James Beard House to cook for the James Beard Awards banquet in June 2008.  Also nominated as a "semi-finalist" for The James Beard Awards 2009 "Midwest Chef".

Currently leading the culinary team at Monarch Chef Galliano concentrates on a seasonal menu that is ingredient driven utilizing local farmers.
